Start with French subtitles on
Any words you don't know, pause the game, and translate them on your phone, and write down their translation in a notebook
Skyrim is good because you probably already know it and you can have fun without really following the story or understanding what's going on 100%, but there's lots of items to collect that add to your vocabulary
