I rolled a random country online and got Sri Lanka. So, today I'm going to try to cook Sri Lankan curry. That's the only dish from that country that I can make with the available ingredients. In addition, I will bake a lemon cake and brew grapefruit compote.

First, take a half of an onion (you can use red one too), an inch on ginger and four garlic cloves. That's one huge garlic clove, I must say.

Mince it and set aside. Then we need three roma tomatoes and one green chili pepper. The recipe says that you can do it with or without the seeds. I don't know what difference it will make.

Cut the pepper lengthwise. It's kind of long, so I decided to cut the strips. Cut the tomatoes in medium sized cubes. I decided to leave the pepper seeds out. The recipe says to use two peppers, but I think that it would be too spicy for me.

Now mix one tablespoon of paprika, one teaspoon of chili powder, and 2 and a half teaspoons of curry powder. We'll also need two bayleafs (bayleaves?) and a cinnamon stick.

Add tomatoes, pepper, salt, 1 teaspoon if brown sugar, 2 teaspoons of apple cider vinegar, and 800g of chicken. Increase the heat a bit and cook for 10 minutes with the lid off. Stir.

I think that's a bullhorn chili. They're quite sweet and no heat so seeds or not won't make much of a difference either way

In one bowl mix a cup of flour with a teaspoon of baking powder. In another bowl mix three eggs with a cup of sugar. Whisk it for 5-6 minutes.

Gradually mix in 50ml of warm milk, 70 ml of sunflower oil, zest and the juice of our lemon.

First the chicken, then u remove it when brown, then the onions, cloves cinamon etc etc whatever spices, then the garlic ginger chilli paste, then the rest of spices, then tomatoes then the chichek in.
Don't let the salsa split in any given time.

Now, for the compote we will need 2 liters of water, 700 grams of grapefruit, 175 grams of cane sugar, and 10 grams of mint leaves.

Peel the grapefruits, cut into pieces, mix together. Bring to a boil, cook for 15-20 minutes. Probably better served cold.

My Armenian family always made compote using apples or this other fruit that looks like an apple but I've never heard of a grapefruit kompot. Gonna try to follow your recipe and make some one of these days

Apple compote is the default compote here. The fruit you are talking about might be quince. I haven't tried cooking the grapefruit compote before, only orange. Orange compote was great, so maybe this one will be good too.

Yeah it's quince, didn't know the English name for it. Doesn't taste that great but the compote tastes pretty good

It's quite spicy, but I expected it to be spicier. Probably was the right decision to put only one pepper in. The rice is perfect. Chicken is well cooked and very tender. Pretty good overall.
Neither did I. Had to look it up. Never tried quince, but I'd like to someday.

There's no need for you to think, Carlos.
The order and cooking time of each ingredient and the heat are essential, you can't put the onions after the tomatoes because they wont caramelize they will just boil...
If you don't fry the garlic chilli ginger paste properly it will not cook well, if you cook it too much, it will lose its entire taste....
Cooking is for the curious, you have to want to know what you're doing and why and it shows very quickly.
