The Roman and Byzantine empire held too large an area to really only be part of one ethnic group. With the Byzantines you would be looking at Greek or Cypriot phenotype. Classic Roman would have been more of a mix between Slavic and Mediterranean phenotype.

Most closer, are Italians. If you want to know how ancient Europeans looked like, you should see Sardinians (such myself) because we had almost little/no immigration for a long time. This led to inbreeding, but also offers unique opportunities to study genetics. Sardinians are known for their longer lifespan, short stature, and strength. That’s why Sardinian dna is unique in the world (you can google it, plenty of results in English too)!
