I tip the local restaurants that I patron on relatively frequent basis. They recognize me, and know that good service results in a good tip. I'm ensuring that in the future I will always have the best service. If it's a place I will not go to again, such as when I'm traveling, they will get zero every time. I will not be returning, there is no benefit to me paying more.

Workplaces now do this thing called "tipping out".
Basically, the employer charges the server a portion of the amount sold, usually between 1-5%, but I've seen it as high as 10% at one place.
Ostensibly its for cooks and other staff to get a cut on tips, but in reality the employer has no obligation to give the staff any of it (and from what ive heard, they typically don't)
Ironically, that means if your a server, you want to serve LESS because you want a lower tip out, and cant necessarily recoup the costs of a meal if it was big and they only tipped something like change.
My advice to you: do not tip but ONLY if you will never return to that place. Many waitresses will taint your food if you return. If you don't tip and someone tries telling you that you should, pretend to not understand. They will give up and you can just leave after you pay. There is NO LAW that requires you to tip.
