It's not just the color of the skin. The color of the skin is an heuristic that give you a lot more of information. Some of it is behavioral, like temperament. You know that a white male has more chances of having good manners and less chances of chimping out and bashing your skull with a hammer. Other attributes highly related with skin color also are biological, for example non-white people smell bad. Blacks and hindus tend to simply smell bad, part of it is because of their diet and part of it is simply because of how their bodies work. White people simply don't smell as bad.

My theory is that it makes nonverbal expressions easier to read. It's why there is a smiley face on a yellow background. The contrast makes the expression more vibrant.
