So federal number 1 buck is the best shot load for a shotgun. But what is the best slug? Can be 2 3/4" or 3". I need it for defense against skin walkers as I do not own a .45-70

That same load in #1 will still have sufficient penetration (over 12" in gel) or likely pass through a torso while having more potential wounding area. #1 is the best balance of pellet count and penetration. It's just hard to find with the flight control wad.
So 00 flight control usually the easiest "best" load to find and it's splitting hairs in terms of effectiveness. Dead is still dead

600 grains going 1900 fps = ~5000 foot lbs of energy
00 Buck has generally inefficient stacking in 12 gauge, it's less than optimal but still works.
As for slugs, I recommend sabot style for rifled shotguns but rifled foster slugs for smooth bore. Federal Truball Rifled Slugs are pretty good, the 3' shells especially are very stout. Remington Slugger and Winchester Super-X are great slugs too. I personally prefer 1oz weight.
5 shot average was just over 1400. My handloads with 2oz cast slugs clock in at 1200, not fast but they hit like a pickup truck.

I'm looking for fun slugs to shoot out of my supernova. Walmart has 3 inch and 2.75 inch hollow point slugs but they're pretty pricey. Any recommendations? I also really want to shoot a few 3.5 inchers out of it.

Buy brass shells and reload/cast your own slugs. Shotgun shells are the easiest thing in the world to reload.
