Where would the war take place?

If it's in Taiwan or some place right next to China, China can disrupt US force projection pretty badly by blowing up air bases and naval stations in the region with medium range ballistic missiles.

If it's in the Middle East or some shit, China can't even show up to fight.

Quite possibly. The US would be too busy to focus on Eastern Europe for the course of the war. Due to the naval nature of a Sino-US conflict, American ground troops would likely maintain the ability to secure NATO allies, though.
