Japan switched one of their existing subs to lithium batteries, it doubled it's electric range and decreased charging time, that was without redesigning the entire thing to take advantage of them and using fairly conservative battery chemistry. With newer tech over the next few years you could probably expect another 2x-4x improvement. One other interesting thing is modern batteries have a much higher power density than a nuclear reactor even though they store far less energy overall. If they design the hull for high speed the electric sub could output much more energy to it's engine in small bursts. Endurance would be limited but you could probably outrun most torpedos. The only issue might be existing diesel generators, they're going to need 100 megawatts or more to rapidly charge these high current batteries, they will probably have to switch to gas turbine engines.

You can try switching to something like a diesel fuel cell as a silent (pseudo-)AIP power plant, but they have issues of their own. They're very large, they have relatively poor power ratings (better than the hydrogen-oxygen ones, but still bad) and they require synthetic diesel (because the catalyst gets poisoned very quickly by impurities from regular refined diesel).

I think a bathroom/head would be a good idea to toss in. This way you can lock down a ship and there is someplace to piss. Less time away from station for the bathroom makes sense as well. Just thinking there has been.. issues with that on ships with women in charge with pissing on the bridge.
