I liked beating up the cops and using the taser against my competition.
Shoving the nightstick in the front spokes was satisfying too.
There was also pepper spray I would use right before a big turn because it forces you to go straight ahead for like 4 seconds.

Speed and maneuverability. Firing weapons from a motorcycle is tricky. Since you're throttle is on the right and your clutch is on the left. If you use you're right hand you will lose speed quickly if you pull a gun. If you use your left then you will have trouble shifting. You're best bet is to use the best qualities of the motorcycle to get out of the situation then if needed stop a distance away take cover and engage targets.
