A sheep has a very specifically designed digestive tract that is not typical of herbivores.
Comparing a human to a gorilla, chimp, or orangutan would be more appropriate as they're mostly herbivores and have a more typical digestive system.

Chimps are omnivores specifically frugivores. They have been seen eating meat but are no where near true omnivores, their diet is still mostly plant material.
Yes gorillas have a specialized technique to gain more nutrition out of food but humans have been known to perform this behavior as well (it's actually seen in all ape species as). They still have a far more similar DT to humans than a fucking sheep.
