If you're talking about clean as in stereotypical healthy foods, it doesn't matter. If you're talking about clean bulking as in staying close to your tdee it's so you don't gain too much body fat.

Different foods have different effects on your body. Different carbs have different glycemic effects (spike your blood sugar in various ways)

You also get certain minerals and vitamins from some foods.
