Why do almost all Isekai not only make the protagonist go to another world, but also have him be extremely special/have special powers that nobody else has?

Because we all want to be unique without having to put in effort.
Getting transported to some medieval time with current modern knowledge would be a big enough cheat, adding anything else is overkill.
I don't know what this is but it sounds like it's meant for young men who don't have the character to want to live a life without having everything handed to them
its a genre of manga/anime where the main character is transported to a magical land where he gets to live as the chosen one ousually but some have them live out ordinary but comfy lives. youre pretty much spot on though

A: Get the audience to connect with the character and
B: Get an excuse to infodump.
The MC is a newcomer so he has a reason to ask all kinds of questions about the world, and the fact that he's from ours means people empathize with him more easily. (Also the fact that he's a complete outsider probably makes him relatable to people who feel like they don't fit in anywhere)

Eh not really. Unless you are telling me you actually know how to make this stuff, your knowledge will be too superficial. We live in a world where we know just enough and then can look it up super fast giving a false idea of how much we know. If you know how to make drugs or build power plants from scratch, then yeah, I'll concede you'll have a huge upper hand, but I doubt most people have the knowledge and skills to put this into place.

I think anybody with a basic understanding of modern health and medicine could become a kings personal doctor in medieval times
