Some version of this story is in all four gospels and it's baffling. Why would Jesus kill a fig tree for not having any fruit? Didn't He create it that way?

Christ specifically cites the Torah and provides is as justification for his own ideas. You can't separate the two so easily, but you're not alone - Christian apologetics since Augustine have been falling all over themselves to invalidate their own holy book.

The context you are missing is that the fig tree was a symbol of the temple.
Earlier, Jesus had been there turning the tables. Behind him stood a very large painting of a fig tree.
As he looked at the fig tree, he was reminded how the temple also did not bear fruit.

While that certainly is a reasonable proposition, I am fairly certain the Gospel makes the more extreme command to sell all your possessions and follow Christ.

You have to "give up everything" to follow Jesus, but that doesn't necessarily mean that you own nothing. However, if you give everything away, you will store treasure in heaven.
