Probably because competition is fun and with sports the competition is compact and contained, the rules are clear and it goes from beginning to end in one match making it easy for a group to gather for some fun one evening and then call it a night.
People do it in all aspects of life
Clubs, hobbies, music, political views...

that's my point exactly, i think its the fact that people just like to be part of something so big and ridiculous. just like how if you are in a stadium, nobody cares about your individual cheering or yelling or clapping or whatever, but you are a part of that greater crowd and it feels good.
so when somebody does something stupid in game and 4,000 people type LUL, its the same social concept as cheering when your team scores a goal.

Is Ubisoft the only one with these super scripted multiplayer gameplay demos on E3? I watched a few compilations from this year's E3 and now I'm just watching Ubisoft's past E3 presentation videos and every one has some gameplay with super authentic gamer dialogue.

If it does then it's probably completely outranked by more base things like common interests and physical attractiveness depending on the situation.
Essentially how much the people conform to the norm for the group.
It would probably be too hard to make some actual gameplay with actual people and make it look interesting enough.
