Displays have a chip in them that the phone talks to.
The chips have an ID programmed into them by Apple.
Third party sources for the screen don't have an ID programmed into the chip.
Apple just wasn't checking the IDs before but now they are because they're not making enough money from out of warranty repairs.

My guess is EDID from the display. On GNU/Linux there's monitor-edid for reading it. It's useful for getting things like supported resolutions, refresh-rates and also includes panel name, serial and things like that. Both laptop and desktop and mobile display panels have a small chip that sends EDID data. Apple can easily check what the panel reports itself as and refuse to work if it's not an "original" Apple-panel. They do this with some of their laptops and now they've begun to do it with their phones.

Ironically it is possible to do a workaround: read the EDID data from a working Apple laptop or phone display and clone it. EDID data chips tend to be read-only but they are programmed by someone at some point so it's possible to make (but you can't just buy some off the shelf panel and reprogram it).
