Why use it instead of something like Ubuntu? Fedora seems way more suited towards use on office PCs than it does for home PCs.

Simple answer: you don't. Fedora is and always has been an unstable mess, used as free beta testing for RHEL

So can you install software that doesn't have a binary package release this way? Build the package directly from repo and then install?

This is bullshit. Fedora is stable and RHEL is totally disconnected from it. All the packages RHEL uses are maitaned internally by Redhat and are different from those from Fedora.

i just installed 28 beta last night. the xfce desktop is integrated well enough and i'm impartial to themes so i'm just running with the defaults for now. time minimalism is always going to win out over software minimalism for me. i can easily ignore polkit and its retarded kin. i can't ignore broken kernel updates, recompilations, broken config updates, dead/limping mirrors, etc. not to mention the community around the "dur juz werk" distros are more interested in helping you actually get something done than shrieking their own opinions and providing exactly zero solutions.
