What classes should I do for this degree

depends on what your school offers and what you're interested in

They'll offer anything I just need to know what the bare minimum of cyber security is

You should definitely take classes on operating system internals, both OS theory and practical OS development. Going along with this, take a malware analysis class.

Also take networking classes, and understand exactly what happens at each layer. Find classes that teach you details about common application-level protocols and give you practical network security experience.

On the programming side, take classes that will teach you C and x86 assembly in detail. Also get to learn python, as many security-related software libraries are written for python, and get comfortable with how things generally work in linux distros.

i took a networking course, passed but didnt take it too seriously and am really rusty.

i'd say what i am most lacking is malware analysis
no Haskell ? Or GO?

haskell and go are interesting languages but they won't help you much for infosec stuff
