PiHole blocks all ads/telemetry/tracking across any device on my network. Connecting a new device? Shit is already set up, no add-ons or apps needed.
uBlock is mostly just used for cosmetic hiding of elements at this stage.

UBlock Origin + UMatrix is the only real answer here. Supplement with Privacy Badger and Self Destructing Cookies if needed.

I also use Blockada on my phone. It replaced DNS66. Can't quite remember my thought process behind the switch, but it works well.
