They likely get this information from the user agent string that is sent when somebody visits a website. It sent It sent him the HTTP get request from the client
Likely the unknown category are browsers that fail to identify an operating system within the user agent string and not some exotic os nobodyuses except North Korea
I mean when you send a w get or a curl request the user agent string literally says W get or curl, it doesn't identifying OS effectively dropping it into the unknown category

To reinforce my claim, most search engines as they are crawling websites send a user agent string only containing the name of the search crawler such as Google or Baidu spider.
You're not seeing something weird or uncommon as f***, you're just seeing web requests that don't list an OS in the user agent string when making an HTTP get request
