Is this the best guide on how to compile/install GNOME3 w/o systemd on Gentoo? Also, where can I find a recommended list of USE flags for a hardened setup? Now when grsecurity is gone, is it just SELinux which actually hardens the kernel?

I don't think they ever talk about a hardened setup so that's something you will have to figure out yourself.

For example, Wayland provides more security/process isolation than Xorg does. Is it worth it to choose hardened profile during the initial installation at all? I've already checked dantrell's guide but I was looking for something a little bit more in-depth like Wayland vs X approach and so on.

I guess you could choose the hardened profile during the install then follow the guide fully for wayland support
