Sysadmin here. I have 6 monitors on my workstation, 3 for my main workspace and 3 I use for various VMs and test environments.
My setup at home only has 2, for private use, or if you don't do anything involving many different configurations, you really don't need anywhere close to that many.

My top screens are mostly used for monitoring things, like email and IRC and status logs and shit like that. Things I want to be able to see updates in quickly, but which I don't otherwise spend a lot of time looking in detail at.
