Vega 56 is the best deal here, you get a card that performs better than 1070, especially if you'll flash a Vega 64 bios to it, and FreeSync monitors are much cheaper than G-Sync ones. It's a very good deal overall.

Vega 64 is identical to 1080, +/- 10% depending on the game.
Vega 56 is around 10% slower than the 64, out of the box that is, but clocks very nicely, while being on average 200€ cheaper, pretty much half the price of a 1080 while being faster than 1070.
Yes, you're right about FreeSync too, for the price of a 1080, you can get a Vega 56 AND a ultrawide FreeSync monitor for example.
