If your OS is so bloated that you need to keep it on a different drive you need to upgrade.

That's not the idea. You keep the the stuff that benefits from the SSDs speed on the SSD, and the stuff that doesn't on the slower HDD.

It is not because Windows is 30GB, it's because you can a smaller SSD since you're only using it for your OS and software and spend that savings on a HDD for shit like music, images, and video. M.2 is the form factor. NVME m.2 is very fast. NVME Sata has same speed as a non-M.2.
I use a 500gb 970 evo for linux root and projects I am working on at the moment. After a project is done I transfer it onto an hdd. I also have a 500gb 850 which I use for gaymes and windows. The 970 evo really speeds up everything. If you do photoshopping on very big images, it will speed shit up, a lot.
