Lunchtime with Bjorgen

Hello frens, Bjorgen here. I'm making some lunch at home again. There was a bit of preparation yesterday, starting with this pineapple.

This pineapple corner only cost like $3 from eBay

It's a pineapple corer, not corner, but my phone begs to differ.

Took this can of water chestnuts, drained and rinsed them.

Then I put them in the pineapple juice to marinate overnight.

Diced that up and put it in the wok with some vegetable oil.

Looked well cooked here, so I drained all the chicken juices.

I'm here. Still cooking.

I put in two cans of coconut milk and one jar of madras curry paste.

Brought that to a boil, then covered it, lowered the heat and let it simmer for awhile.

Got the pasta boiling

Drained the pasta and put some in a bowl. Poured sauce over it and sprinkled it with some of the pineapple-infused water chestnuts. It's not very good. You see, I wanted to use President's Choice brand Madras curry sauce but I couldn't find any in the town I moved to. Then I would have used one can of coconut milk and one can of sauce. It otherwise would have been a perfect meal.

What town are you in? I've never seen that brand of curry paste before here in Ontario. Only PC or Patak's.

Peterborough. Bought it from an indian guy at the local farmer's market. I'm going to Toronto in the next few days, so I'll have to stock up on stuff that's not available here.
