That's because the Start Menu and Taskbar were put into the "Universal Windows Platform" paradigm in Windows 8. There's no classic mode because the UI is completely different.

that's the thing though, the UI kills like half the appeal of 10 for me. at least 7 had some consistency but with 10 you can tell it's this duct tape and cardboard monstrosity. most linux DEs are more consistent than it for christs sake, and even aesthetics aside it's still a horrible system altogether
