When you hit the degauss button, it makes the shadow-mask have a very small, random magnetic field, correcting the colors.

CRT is really just a big capacitor with two set of plates to use Lorentz's force to manipulate stream of electrons and a ion canon to provide electrons. So to my understanding, chroma and luma on display can magnetise from electrons constantly hitting it (electromagnetic effect) and demagnetisation just launches a strong electromagnet with reverse polarisation.

CRTs are electron guns. They shoot beams of electrons at the phosphors in the front of the screen to light them up. Electrons are affected by magnets, so putting a magnet near the tube will cause the beams to distort.

A lot of crt monitors don't even have degaussing coils built in. Mostly cheaper ones, but you're absolutely wrong that they all degauss when you turn them on and thays why they buzz. It may be something in specific models, but isn't commonplace. It takes a few seconds to get a good degauss, longer than it takes to turn on if its warm(recenlty turned off).
