What exactly is the purpose behind 5g? My 4g speeds are fast enough to watch videos in HD so what’s the benefit?

Supposedly 5g aims to reduce latency of the network. So hopefully you won't see more lag in 5G vs Cooper/fiber.

Basically wireless networking standards are ways with which information is propagated - in the form of packages. These packages have their own broadband, standard size (and signatures), frequency, etc. With each new networking standard, package size shrink, speed and range amplifies. With 5G, these packages become so small that broadcast frequency is very high and at a very high range - this is cool for mobile. It also optimizes battery life and use of machine resources - this is cool for embedded and IoT.
