As far as I've heard you need a custom user.js to reset your settings at every startup. Using software that actively resists the user like that sounds really uncomfortable.

You heard right. user.js ensures that updates don't change already tweaked about:config settings (e.g. addon recommendations were reenabled with the recent FF65 update).
I find them quite hand though. They allow me to easily back up my settings and to coordinate the different about:config tweaks of my profiles.

FF is a bad choice if you want a browser that "just werks" when it comes to privacy and security. I'm not denying that.
