WiFi is just a means for your data to get from your computer to the rest of the internet and visa versa. What you're probably thinking about is TLS. TLS basically is just an agreement between two computers to communicate using some cryptographic function and key. Basically public key cryptography is used to exchange a symmetric key and then communication like normal is done except all messages are encrypted using that symmetric key. So basically when you're using HTTPS your messages can't be read by anyone else. If you're not using a secure protocol then it's just plaintex that anyone can view if they get access to your packets.
