My problem with open world games (I assume yours is) is that it becomes an insane amount of work very quickly. It's no wonder it takes entire teams an upwards of five years to crank them out. As much as I love them and prefer them as games, actually making them is almost impossible as one person.

Add a ton of raw materials that can be harvested (maybe play with random generation?), and add a lot of rare ones too that can be used to make rarer and more powerful items. These might then be more valuable in some kind of economy system. Perhaps have enemies that require certain kinds of weapons to defeat.
Also, exploit the fact that the NPC interaction is probably entirely text-based. You have a lot of room to make very interesting characters.
