The less time you spent organizing and the less you care about organizing, the better. You cant 'perfectly' organize anyway.

Just use search or sort by group when looking for files

is there some way to sort images by color (some semi automatic way, not by hand and wrist grease)

tl;dr categorisation is hard. tagging is probably better for your case . i've looked at filesystems that supported tagging, but there's not too much out there

If you use windows, you can try this built in method to create tagging file system without any installing apps:

1) Create some blank folders on your desktop. This will be your tags e.g Pics, Vids, Cat, Porn, etc
2) Pin the tag folders in your quick access
3) Select the files you want to assign to a specific tags
4) Alt-click drag the files into the tags. You can assign as many tags to a file. It will not make unique duplicates

I'd say you should have a few folders with no organization that would get organized into other folders once a month. Once the organizational folders are of no immediate use, they could go through reorganization themselves as well to see what needs to be removed further.

I wish filesystems would use 'tags' so you could tag files/folders in addition to directory hierarchies.

You can get a pajeet to do this job.
