use other distro livecd, so you can read wiki and copy commands from the browser. the only hard part is the kernel configuration, but you can use the automatically generated one, if you stuck.

Unironically Arch.
You get most of the benefits of Gentoo (lightweight, lots of packages, customisability) without the major drawback of, particularly on old machines like my Dell E4300, waiting fucking aeons for things to compile.
I known it's a massive meme but I've used Arch as my daily driver for getting on five years now, would recommend.

Use it to stream your desktop. You can enjoy desktop performance with laptop convenience (at the expense of those 10 ms delay)

It's actually true. She got it from work, It's a leftover computer from when there used to be some kind of cs/tech education. I believe it's one of the teacher's old laptops. (My mom's a teacher)

Linux lite is a pretty easy iso to boot into and many times it will give you access to any files that may be locked by your moms password.
You can then use "photorec" to find any files that she deleted.
Or u could just go thru any directories that she didnt delete
