It's a ton of things.
The UI is just the most obvious and immediate problem you encounter. People that spout shit like "hurr durr year of the loonix desktup" have never interacted with the average consumer. They will give up the second they open a browser and wanna install "that internet google thingy" and then get asked on the page .deb or whatever Redhat uses. That is the exact moment they give up. To them it doesn't matter if there is an app store or whatever cause they won't find it cause the start menu is different and that is scary.

And sure software compatibility improved a lot through the years but a lot of jack shit is still jack shit. People expect EVERYTHING to work out of the box and that is not given at all. They won't use $GNU+Alternative cause it's not what they used before so in their mind it's literally worthless now and forever.
