I don't want to chormium & chormium forks and i used firefox for now
Seamonkey, palemoon, icecat all look like 2003 tier shit

Waterfox is decent, but captcha is fucked and im a retard so some addons from firefox don't work so thats a no from me

Which one to use and why ? i want something a bit more privacy oriented.

WATERFOX WITH CAPTCHA FIX:

Get rid of Firefox completely. Uninstall. Wipe remnants of it from you drive.

Install WaterFox.
get add-ons (you may have to go directly to mozilla's website if they won't load when searching for add-ons in browser):

https everywhere, ublock origin, and user-agent switcher

with user-agent switcher select windows /firefox 60 ESR under Desktop----this will completely fix the captcha problem. (addons.mozilla.org/en-US/firefox/addon/uaswitcher/)

Just turn off the stuff that sends data, there are options to turn it all off after you reinstall your addons. Just relax.

More specifically, that's app.normandy.enabled set to false and a similar one for telemetry in about:config.
To deal with the extensions clusterfuck on linux versions you can set xpinstall.signatures.required to false too.

Waterfox has a seperated adress and search bar and it's pretty cancer. Is it possible to unite them? IC, FF didn't have this issue.

By default in waterfox it seems you can search from the address bar. Click customize and drag the search bar into the unused area and it'll go away.
