Is there a server app or something that lets you mount your phone as a SMB share?
I hate MTP, but uploading my shit to some internet service is even more inconvenient.

That does exist, but the more common way would be to mount your NAS or desktop computer on the phone and copy/move files from there.

Syncthing and KDE connect are both great. Syncthing when you need to transfer entire folders and keep them synced to the pc or home server and KDE connect when you just want to transfer a small bunch of files.
