I'm trying to figure out what to make that doesn't already have 10,000 existing competitors on the app store that somebody would actually be willing to pay for. Something that wouldn't require vast infrastructure, customer support, a team of lawyers, moderators, etc. Something so simple I can just make it and forget about it.

I use to work with a guy that was spending money "developing" a phone that can be docked into a tablet. He spent thousands on "R&D" and to get schematics drawn up. One day he shared it on Facebook and was happy until someone posted a link to the same product that was for sale by Asus. The fucker didn't know the thing already existed.

I started a new programming gig 3 weeks ago! Doing firmware for some new 5G products.
I was at Apple between 2011 and 2017. It's easy to verify since 95% of the work was open source. :)

IIoT devices, like transparent network bridges and gateways for weird industrial L2 protocols.
I'm learning a lot about low-level networking which will be useful for my OS development, so I'm pretty happy with the situation at the moment :)

The TCP/IP stack is still very "vertical slice"

These are all things that can be fixed, just takes time to get to everything :)
Haven't even looked at how to support NVMe.
I've really only targeted QEMU so far. People make a big deal about running on real hardware but to me that's just another feature.
