Most people don't set up their own mail servers on residential IPs.

You don't have to run it out of a closet, but you can. And it's a god damned nightmare to get and keep right, so you're gonna sink a shit ton of time into it. Anyone who says different isn't keeping up on theirs.

The bottom line is that there's a reason that a lot of internet providers don't allow residences to set up their own servers. Too many idiots who don't know what they are doing leave themselves open to all sorts of problems, and plenty of people who DO know what needs to be done are too lazy to do the upkeep.

Just bear in mind that most professional mail servers and relays won't tolerate anything from a server that doesn't have a fixed IP.
It's a well-known anti-spam measure.

the problem is not the fix ip address, you always have a fixed ip address but this is not yours. You need a reverse without this you will be instantly blacklisted. And thats a good concept. Imagine everyone can configure his own shity bugy and misconfigured mail server at home and could send out spam mails to everyone...
The spam mails that you are receive is the the result of misconfigured systems e.g. by ISP's which are do not filter and blacklist that detailed or give out reverses to easy to not get blacklisted.

You can create at home email server just for archiving your mails. Your email software will login like a classic imap/pop3 connection to your email provider and save it on your email server. From there you can send it to every client in your home subnet automatically if you configure it right.

Running your own mailserver isn't really an option anymore because most big mail providers just classify you as spam so that more people will use their shitty service.

you need a VPS because most likely, your ISP blocks inbound port 25. this isn't a problem for normal auth (which should happen on port 587 over TLS), but other mail servers expect port 25 reachable. your email won't get delivered otherwise

tl;dr opensmtpd+dovecot with virtual users amd spamd is very easy to set up
