Not exclusive to Unix. If an attacker has physical access you're fucked regardless of the OS. This is literally a core tenet in security. You should always use full disk encryption.

Effective physical security is a lot more challenging than encrypting your shit.

Servers have to be online all the time, therefore leaving the encryption keys in memory and therefore would then require a trusted technical operator managing the encryption 24/7 to ensure safety. It's a lot easier to just physically protect the server.
