Old news. This shit got resolved ages ago. Marginally simple tweaks that any non-retard can achieve basically neuter or flat out disable any privacy threats that might occur.

On a related note, telemetry in and of itself is usually harmless. It's just hardware, software, error, and driver checks at least, though when telemetry is used to observe your actual usage habits it becomes an issue.

Telemetry is not harmless when it's done in the way that Microsoft is doing it. Telemetry must be done in a privacy-conscious way. Microsoft is not doing it in a privacy-conscious way.
They literally send your keystrokes, full memory dumps, random files (for example for their Cloud Antivirus, personal files related to a crash, etc.) and so much more to their servers.
And of course the US government isn't doing anything about it because they WANT this sorta stuff to happen. Because NSA.

Installing additional programs is also very easy.
If Ubuntu is too "noobish" for you, then you could go straight to Arch or Gentoo, if that's really what you want.

The way I see it, these are your options:
1) GNU/Linux, like you said.
2) You could keep using Windows 7. Sure, it won't get any security updates anymore, but if you get a firewall (such as SimpleWall or TinyWall) and keep your applications (especially your web browser) up to date, you shouldn't have too much to worry about. Make sure to disable CEIP and remove any and all updates that have been identified by users as being just telemetry spyware garbage (just search around a bit on your favorite search engine). Then it's only a matter of time until software vendors stop supporting Windows 7, for example Adobe has done just that recently unfortunately. The latest versions of Premiere Pro, After Effects, and maybe some other of their Creative Suite applications will only run on Windows 10 and macOS from what I've heard. But you could still use older versions of their software, or avoid Adobe altogether and use competing products (VEGAS Pro is an example for professional video editing).
3) BSD. But that would be a pretty meh experience honestly.

There are simply so many downsides to using a Mac instead of a regular PC, listing them here would take forever.
Plus, honestly, I don't really trust Apple at all. They probably pull the same kinda shit as Microsoft.

You have a point, however, consider this:
Would you rather get fucked in the ass by 3 companies, or only by 1?
Let's say you use Windows 10, Yahoo! Mail, and YouTube.
Windows 10 can be replaced with GNU/Linux, BSD, or at the very least Windows 7.
Yahoo! Mail can be replaced with Tutanota (just an example provider, there are many more privacy-respecting ones available).
YouTube is not exactly easy to replace.
By replacing 2 of your 3 used software/services, you've now managed to still gain a rather substantial amount of privacy. It's better than nothing!
Sure, you won't get 100% privacy this way, but I don't think 100% privacy is achievable in general, unless you wanna plug out your ethernet cable or whatever.
It's all about minimizing risks and preserving as much of your privacy and freedom as you personally can and feel comfortable with.
You can't really have a black-white mindset on this (or whatever it's called, I think you know what I mean).

I saw a strawpoll here recently asking people which OS they use, and if I remember correctly, 60%ish of the votes were Windows 10.
So, no, I don't think I'm retarded for alerting people on here about the risks of Windows 10.
The more people switch to alternatives, the better. I want the world to become a better place as a result.

As for Microsoft Office, maybe give LibreOffice a shot? It's pretty good.
Or try hosting an ONLYOFFICE instance. It's also pretty decent.
MSOffice probably also works on 7, but given the fact it's a Microsoft product, they'll probably stop supporting it very, very soon (most likely when Windows 7 reaches EOL).
MSOffice will most likely not work in Wine.

As for the obsure arabian university programs you mentioned, again, are you sure those don't at least work on Windows 7?
Windows 7 > Windows 10.
Or try and fuck around with Wine a bit more.

Ideally, you could have GNU/Linux on your host machine and just have a simple Windows 7/10 VM (preferably with no network adapter, if possible) for all the programs you can't replace or get to run on your host.

From what I know, iMessages is supposed to be end-to-end encrypted and is heavily marketed as being such however iCloud Backup (which from my knowledge is enabled by default), will upload the key(s) of your iMessages to Apple. Therefore Apple, and by extension everyone else who wants to get your messages and other data, will have access to them (if you use(d) that backup shit). Apple even admitted this somewhere on their website (idk where exactly).

Linux doesn't support visual studio so I won't use it. Linux is not a drop-in replacement for windows so stop recommending it as such.

I'm not sure exactly which programming language you are using in Visual Studio, however if it's .NET, then check out JetBrains Rider.
It runs natively on Linux and also has a ton more useful features. I'd say it's much better than VS actually.
Other options include Visual Studio Codium (Codium, not Code! Code has spyware), MonoDevelop (also known as Xamarin Studio), or just a regular text editor like Vim, Emacs, Sublime Text, Atom, you name it.
And even if you're not coding in .NET, there are many other IDEs available on Linux for basically every programming language in existence.
Visual Studio isn't the only thing on the planet yknow. Linux is also generally praised as being excellent as a development environment and far better than Windows. So we're not just talking privacy here, we're actually talking features and usability, in this specific matter at least.
