I'm with KDE/Plasma currently on openSUSE tumbleweed, was always a fan of GNOME, until they started to remove features. I like it's simplicity over plasma.
But, what else GNOME has to offer over KDE/Plasma?

Get your ass on dwm. If you want to configure it you will see there is a seamless transition to programming C and understanding everything it does down to the last bit.

I have ultra-wide monitor. Would I benefit from switching to GNOME?
out of the box doesn't really matter, when I already have configured KDE/Plasma to fit my needs. And I'm not afraid of doing it again.

It has improved substantially. I think you need to be using a bleeding edge distro to see experience that though. I've never experienced lag in Gnome, except on a really shitty dual core laptop.

- menu changed to GNOME shell like dash (or whatever it's called)
- moved task bar to left side of the monitor
- removed window borders
- dark theme (it's easier for me on the eyes)
- set wallpaper to wikimedia daily image
Don't think this counts as ricing.
