People use shortening of words when referring to several nationalities. I always found it weird that japanese on the internet were the only ones who found it offensive.
Some americans might use it in a derogative manner, but some might not even be aware of it.

Factually false. Japanese names are very diverse compared to other Asian names.

The situation is similar to how it went in parts of the west. In the past, surnames were almost like a title given by your lord, and anybody with one went higher up on the social ladder. After the Meiji restoration, everybody was free to choose their own name (with some older feudal names being restricted iirc), leading to people choosing names from their profession or location. For example, farmers might have given themselves the name "田中" - Tanaka, meaning "middle of the rice field". In comparison, many Westerners in America gave themselves the name "Smith" because they come from a line of smiths.

On the other hand, use of surnames was more universal in other Asian countries for a longer time leading to names going extinct over time, and people just gave themselves names derived from feudal lords anyways.
