I was to America once and all the Chinese and Korean dudes I met there were called Jeff or Mike or something. I don't think they used those names among themselves.

To answer your question seriously, it's not just a Chinese/Vietnamese phenomenon. Lots of immigrants to the United States were forced to Anglicize their names and ever since have traditionally used Anglo/Anglicized names.
