I would avoid California at all costs. Chicago has a good population, I absolutely hate NYC but the friend I had who is studying Chinese now comes from there. Chicago has a good population of Chinks, Poles, and Mexicunts. I've only seen the Chicago and NYC Chinatowns and both are pretty good.

The Chinese and Japanese countryside are pretty similar: rice fields, tea, some hills. It's very nice. You often raise chickens in bamboo fields, and ducks in rice paddies. The birds eat insects and their feces fertilize the crops.
Learn Chinese. All women are the same from all countries (some traditional, some sluts, some are mature, some not, etc) don't expect it to be too drastically different from American girls.

You'll get the food and language in both countries, but Hong Kong speaks a lot of Cantonese, and Taiwan uses traditional characters + their accent is known to be the "gay" accent in Chinese.
They are also seen as snotty by mainlanders but they are closer to a first world country.
