It also tended to assimilate its foreign rulers. The last dynasty that ruled China, the Qing, were from Manchuria (and effectively 'foreigners), with the Mongols (Ming? Yuan? Fuck if I know) before them effectively assimilating as well. Kind of with how the Ptolemids assimilated into Egyptian culture. That's why China persisted: it incorporated elements of foreign dynasties (like the queue administrators wear as a sign of subjugation, that's supposedly a Mongolian thing in origin) while remaining mostly unchanged for the rest of it.
Put yourself in the shoes of a new, foreign emperor. WHY would you want to change anything? It works, it's awesome, you're at the top. All you need to do is squeeze into the system and kick back.

yuan was the mongol dynasty both the yuan and qing governments were sinoboos the manchus were already comprised of 75% ethnic chinese who defected from the ming dynasty, so they (the original jurchens who started a war against the ming) were already minorities in their own nationality. nurhaci (the one who founded the new dynasty) even said something along the lines of "dont differentiate between chinese and manchu, but between bannerman and civilian" although manchu culture and language pretty much died off towards the end of the 19th century, the clothing (somewhat) continues to live on, although pretty much everyone (chinese and non chinese) considers it to be chinese clothing.

Chinese wars have always led to incredible kill counts because A. there's a lot of people and B. the rice farming system depends on complex irrigation and cooperative management, it can't really be done by small farmers like with wheat or corn so you disrupt the agricultural system in a war and millions starve.
