Is corn really a staple anywhere else othern than here? How come I've never heard of a foreign dish that uses it?

It's true. You can see how all of Europe is pretty much dark green indicating something like a 70-30 wheat - corn distribution. Corn is often used as a placeholder to prevent soil degradation and for crop rotation.
But the corn is only used for animal fodder I think. The only times we eat corn is when making something Mexican.

Eh it's mainly potatoes and corn which rotate I think. I don't really know much about farming despite growing up surrounded by nothing but farms.
