Because Cocacola is pronounced "coke-a cola". Americans (and English speakers in general have the tendency to transform every word into monosyllables.
It's just easier to say and people generally know what you mean.
I guess it depends who you ask "Do you have some coke" to. If its the mcdonalds cashier and a guy standing outside a bar they'll have different reactions.

Pepsi is a Cola flavored soda. It also used to be called Pepsi-Cola. Just like how RC Cola has the word “Cola” in it as part of its name and to signal its flavor profile to customers.
