Let me put in simpler terms for you, so your brain can process it.
You sell me ETH
ETH goes in escrow
I don't actually send you fiat.
Your ETH is now stuck in escrow.
You now have to prove to the nodes that I didn't send fiat so you can get your coins back. Whatever proof you provide I can provide counterproof through photoshop magic and keep your coins stuck in escrow forever or even get them if my proof is solid enough. Good luck.
