I am a full time trader now but over the past decade, here are some side jobs i have done:
1. Worked for a temp agency
2. Small trading in forex (now my full-time work)
3. Self employed as a courier
4. Weekend office cleaner
5. Grew veggies in my back yard and sold them at the farmers market
6. Picked wild blueberries and sold them on a street corner with my girlfriend
Those are just some ideas...you could work as a dropshipper, shrimp farmer or door-to-door dildo salesman.
PS If its a side business that would flourish, its probably not on the 'side', but rather a fulltime passion

Im sure they have them over in Scandi. Maybe you call them day-work agencies or temporary day to day work companies. Say you are a secretary and you need a job for a week, month or 3 months (whatever time frame), you contact the temp agency and maybe a business contacted them and needs a secretary for a girls maternity leave and you fill in for her.
Some more things I thought of... draw abstract art and try to sell it at flea markets, learn coding, advertise yourself as a weekend elderly babysitter, write song lyrics, poems or books
