Because they are by far the most advanced country in that region without access to significant natural resources. Their surrounding neighbours have solely become almost entirely Islamic due to fundamentalists driving out religious minorities, while Israel is much more pluralistic. While they arn't perfect, it is very clear that Israel is a far superior country to, say, Jordan.
