Oh now that you mentioned it, many Japanese games seem to have some Mexican stuff in some form. Parasite Eve 2 for example has entire area with references to Mayan and Aztec stuff and the director loves Aztec stuff, he even owns some artifacts.
Tekken 3 the final boss is an Aztec alien god and it takes places in those Mexican pyramids.
Hideo Kojima owns a sombrero and in Metal Gear Rising Raiden has a poncho and Mexican hat costume.
